  Biology\nAntinutrients are compounds which interfere with the absorption
 \nof nutrients in the human body. They are commonly found in cereal\ngrain
 s\, legume grains\, nuts\, and even in some vegetables and\nfruits. Severa
 l studies suggest that the reduction of lifespan\,\nincreased infant morta
 lity\, and increased infectious disease\nafflicted people in the Mesolithi
 c period as a result of a change\nto a predominantly cereal-based diet. To
 day these grains are still\nthe main our major calorie and protein sources
 \, so we have to fully\nunderstand the nutritional shortcomings of these c
 ompounds. On the\nother hand\, antinutrients are a double-edged sword\, si
 nce recent\nstudies have demonstrated that antinutrients such as lectins\,
 \nprotease inhibitors and tannins may have many beneficial properties\nin 
 the treatment and/or prevention of disease when properly\nprocessed. This 
 presentation is going to give an overview of these\nantinutrients\, their 
 deleterious effects on human health\, and their\npotentially beneficial us
