However\, even today\nwe are sti ll using very similar fermentation technology as\nthousands of years ago t o make ethanol. Today we can improve and\nmonitor ethanol fermentation usi ng our knowledge of biochemistry\nand microbiology. However\, with new tec hnology in mass spectrometry\nand proteomics\, we can now look at the thou sands of proteins\nexpressed inside of cells. The Africa Rice Center (WARDA)\, an international\nNGO\, works with local farmers on the improvement of production and\npost-harvest technologies. M cGill University and WARDA developed a\nthree-year project on post-harvest technologies. One of the\nobjectives in this project was to reduce the qu antity of energy\nused in rice parboiling activities. Three undergraduate projects\nwere defined as part of this project: the construction of a more \nenergy-efficient stove\; the development of better\, less expensive\npar boiling equipment\; and the utilization of milling by-products as\nan alte rnative fuel. Those three projects were conducted this\nsummer in Benin un der the supervision of Dr. Robert Kok (91Ë¿¹ÏÊÓÆµ)\nand Dr. Aliou Diagne (WARD A).
